Enzyme Selection
Enzyme modification is a green method compared to the chemical modification method. The enzyme acts as a highly efficient catalyst and its catalytic reaction operates under mild conditions and produces very little waste. Different enzymes catalyze different reactions. We screen specific enzymes based on their ability to catalyze targeted reactions of carbohydrate substrates for precision modification. The enzymes we commonly use include glycosidases and glycosyltransferases, such as lysozyme and papain. Each enzyme has different catalytic activity and specificity.
Structural Modification
We employ specific enzymes to perform various structural modifications on marine carbohydrates, including acetylation, deacetylation, depolymerization, grafting, etc. Such modifications alter the chemical, physical, and biological properties of the carbohydrates, providing the potential for expanded applications. We also attach bioactive molecules to marine carbohydrate backbones utilizing enzymes. This form materials with specific functions. In addition to this, we utilize specific enzymes to selectively cleave specific regions of marine carbohydrates, such as glycosidic bonds. Specific modifications of marine carbohydrates are realized by changing molecular weight and structure.
Enzymes are catalytically specific compared to chemical modification methods. In addition, enzymatic reactions are more environmentally friendly and do not require toxic chemicals or solvents. For this reason, we choose enzymatic modifications for a wide range of marine carbohydrates. We use specific enzymes to alter the structure and properties of marine carbohydrates according to client requirements. Enzymatic modification is used to introduce or modify functional groups of marine carbohydrates in a targeted manner.
We also combine enzymatic modification with other methods to achieve a wider variety of modifications to marine carbohydrates.

Results: In this study, the effect of enzymatic modifications on the supramolecular structure based on polysaccharides was examined. Chitosan and gum arabic were modified by covalent grafting of ferulic acid oxidation products, which led to the establishment of new interactions, such as π-interactions. The results show that the modification can lead to the formation of various supramolecular structures through changes in physicochemical conditions. This study provides a method to control the formation of supramolecular structures through modification.
