Rare Sugar From Marine Green Macroalgae

Within Ulva sp., a type of green macroalgae, the valuable rare sugar L-rhamnose is found in the polymeric chain of ulvan. This sugar is linked with uronic acids (glucuronic and/or iduronic) to create aldobiouronic acid 4-O-β-D-glucuronosyl-L-rhamnose units. Additionally, Cladophora sp. has been identified as a source of psicose, also known as D-allulose or D-ribo-2-hexulose. Psicose possesses 70% of the sweetness of sucrose but only 0.3% of its calories.
