Results: This article examines the methods and properties of pectin extracted from three types of Vietnamese seagrasses and evaluates its antioxidant activity. The article used hydrochloric acid pretreatment and ammonium oxalate extraction to isolate pectin from Vietnamese seagrasses. The samples were cleaned and processed to remove pigments and lipids with 96% ethanol soaking. Then, pectin was extracted from the defatted seagrass samples by air drying and storage. Finally, the degree of methyl esterification (DM) of pectin, ester acidity (DE) of pectin, and MW distribution of pectin were characterized.
